During the summer and into the fall, we periodically will have fresh bamboo shoots available. We harvest the edible shoots from our collection of clumping bamboos that produce high quality, tender eating shoots. Some of the species we harvest include Bambusa oldhamii, Bambusa textilits and Dendrocalamus latiflorus.
